I would recommend the spreadsheet approach, with a printed serial number put into each caseback, which would be similar to setting up your own archives matching the serial number of each watch to the records regarding its production. Otherwise you will go down the rabbit hole of microprinting, researching the best glues for the labels, etc. Not worth it for your purpose. Don't ask me how I know.
Or how about a QR code ?

Probably the best way, maybe with a link to the M2M sales thread or the post of the build. Have to figure out how to do that, though.

Keep it simple and take some time to start your spreadsheet now, otherwise with each build (or change to an existing build) the effort required grows and the desire to put it off will increase until one day you realize you sold a build with gen parts for a rep price. Plus, you know, getting old. Just your own serial number is enough. Sort of like watchmakers marking the inside of the caseback when they service it.

Bezel v2 IS more overpolished style, best to use with very vintage liké tropical or 6610, 6350... The V3 IS gen spec and more nos look.

I have few v1 left and think they re good to go with acrylic case from raffle if you rework thé crystal height a little bit as they are .5mm thinner.

I am on the other side of the planet, and a big chunk of my orders just arrived. 😳

good that my son was there to get them but just horrible to be away from the bench 😂

At least 5 new designs of moonswatches, a 14060 and of course my second 1016

I'm going on vacation very soon and already trying to stage my orders so I won't have to bear the misery you're no doubt suffering, lol.

For a whole new level of frustration, attempting to explain to some clown that doesn't know watches about the work and effort you put in to a watch you built yourself is an exercise in pointless self flagellation.

Once you see the dullness of incomprehension it is best to just call it a day and go do something else...anything is less torturous.
