800 or 1000 is good, depending on how sharp your edges are. I always recommend practicing on a junk part if you have one.

Thanks for the advice, but maybe I expressed myself poorly. I don't want to polish or brush the watch, but just make it "softer" to the touch by eliminating those sharp edges. Isn't the 1000 a little too rough?

because the shape is different: it is thicker and it is different. Compare it to a gen and you'll notice

you have to crush the top part and reshape the bottom part
