First time using the cedar plank. OMG! This was the best salmon ever!!!!!!!
If you liked the flavor of salmon grilled using a cedar plank, then try this next time - it will kick the pants off the cedar plank every time. No comparison:
Skip the cedar plank. Instead, soak mesquite wood chips in water for about a half hour to an hour while you are getting everything else prepared and getting the grill started.
Then, if you are using charcoal, spread out your coals and sprinkle a layer of the mesquite chips right onto the coals. They will smoke like hell!! Put your salmon on the grill. Keep the lid closed and don't peek in there. I use a grilling pan that is vented so the smoke comes through all the vents into the food.
Then, flip the salmon fillets over and quickly sprinkle another layer of wet mequite chips onto the coals. They will smoke like hell again. Keep that lid closed!!
When you remove the fillets and serve, they literally melt in your mouth. The meat is so tender and flaky, and the flavor of the mesquite permeates every inch of the meat. It is absolutely heaven on Earth.
