Right there with you my friend. On the rum side, I'd like to recommend El Dorado 15yr or 21yr rum (I'm still waiting to try the 25yr.... One day soon I hope!)Hard to say because it depends on moments and seasons, seasoned straight rum in general.
Appleton Estate 21 (if I have a drink 90% is AE 21, my n°1 is AE 30 but it is hard to source, limited production I only had 1 bottle so far, much deeper than anything else I tried), Vizcaya VXOP Cask 21, Zacapa Centenario XO SGRE or Don Q Gran Añejo for rum.
Otherwise scotch or irish Whiskey HP 25 (great), Glenlivet 21, Macallan Cask, Collins, Jameson, Black Bush, JD cheap and really not bad or even an interesting Lark DS I enjoyed lately visiting SE Australia.
Italian Filo e Ferru rough and uber strong (50°-60° even if I aint a big grappa person) but very interesting.

My favorite is Macallan 12. I also use it to make sauce for my steak too.
I primarily like Scotch (single malt, 18 and over) and Bourbon (Jack, MM, and Bookers). The only Canadian Whisky I'll drink is Alberta Springs...damn it's tasty! Beyond that, I have to be in the mood for a mixed drink that calls for gin, rum, etc...but the wife and I will enjoy either Amaretto or Frangelico during the holidays.
