Many of members here have a collection of the watches and wear different pieces in different situations.
It looks like it became a game or a hobby - to show up in different situations with different watches.

Do you see different peoples reaction on different models?

Based on my own experience and hearing from members of the forum, I can assume following.
Majority of people don't see or don't know watches. So they see no differences between AP and Casio. They look at the design: "nice", "not nice"
Because of that, users has tendencies to lean towards more shiny, attention models with strange colours, strange designs.
Watches with very standard design are considered "undercover".
Daytona, with its 3 sundials grabs more attention then plain dial. Date glass grape more attention then no date.

When I'm not sporting a massive clock round my neck, I go for this (and sometimes both at the same time, if I'm feeling particularly under-noticed):

I can recognize Cartier Rolex Omega PP and AP (and Casio 😅) at a glance now, which was not the case a few months ago 😅 when honestly I did not even look or cared (so your theory is right)

Only AP and PP make me take a second look where I also try to correlate the person and the watch. the rest are within reasonable purchase power of the people I usually meet, so I don't really care

...I would look twice if I see a gold Daytona though 😁

Also true.
There was a boxing match Fury-Nganu in Saudi 1-2 weeks ago.
A lot of people were there.

Usyk ( a boxer ) was with blue date Daytona. I was starred throug my screen to find out if its really Daytona.

Also I know that Kevin Hart is an AP guy. He got AP for normal price, then sell them for retail price.
Now I check his watches on each video

Cyberspace
also I won't recognize a Calavatra or similar watches
That was exactly my point, i mean, for you (and me and a 99 % others) AP means Royal Oak ( a lot of people does not even know the name !!!), PP means Nautlius / Aquanaut and Cartier maybe means Santos, right ?

What @Karabas said is true, the general public look at the form and shape and colours of the watch...you can wear a Vacheron Patrimony or Piaget Altiplano or AP Jules Audemars or Code 11.59 and nobody will ever notice !

Same with Rolex....would a Cellini or a Milgauss attract the crowd like the usual suspects in the Rolex lineup ?

Milgauss and Explorer I personnally would recognize. But that's because I like them
But a Cellini vs a Omega Deville from a distance, nope

I was wondering if sub or daytona gets any attention at all?
They are quite typical, a lot of watches are similar to them.

I think most people do recognize a Rolex, but then the second thought is "Stupid dude spending too much to tell time". In countries like Korea, Japan, China, Taiwan etc, I think the vast majority can tell if you are wearing a Rolex, they just can't tell if it's gen or rep.

He is definitelly utilizing his celebrity by buying for normal price and then resell

Why do you keep repeating this about Kevin Hart?... Do you have a hard on for him!!!!.
Who gives a shite about how much he pays for his watches and what he does with them after.
