My hard-core Porsche would be a non-turbo 911 GT3 RS (997, ie latest 911). Not the Carrerra GT, again, does not conform to classic purity.
I think you'll find that around the Nordschleife the GT3 will exceed a Turbo. Don't get me wrong: a Turbo is great, but it also did come after the non-aspirated 911s in the history of this classic.. and my all-time classic Porsche would be a non-turbo RS from the 1970s.
This RS is almost as powerful as the 997 Turbo - but this 911 is lighter, with a harder suspension set-up, more focused on extracting performance and transmitting it to the track than even a Turbo :
