Rolex Daytona 6241 Paul Newman franken - Where to start

I would start a project for a Rolex Daytona 6241 Paul Newman to have a watch as a genuine (with franken parts).

I need advice to understand what i need to build a 1:1 Paul Newman, everything i need for this project.
