So this puts a smile on my face and I want to build the exact same watch, Couple of noob questions

Trustytime 061 H-Fact PAM (I found that watch on the Toro site http://www.torobravos.xyz/index.php?route=product/product&keyword=pam+061&product_id=710)

Rolli/FGD 055 dial set (Not sure what you mean with Rolli? Or where to find the dial set)

(temporary) noob saphire (I guess thats where the watch comes with)

gen butterscotch PAM strap (Ok, still have loads of gen straps

If you buy the H-factory 061 (form Toro or any other TD), it will have an H-factory crystal as good as noob if not better.
Rolli is a pasionate dial maker active on rwg.cc who produced a few small batches of rare dials like 055, 040, 036 and the pre-v and pre-a range. They are quite expensive but as close to gen as you can get.

Is J making a one-off for you or will it be in ordinary production?
I would mod nothing on the case btw, maybe just check if it's worth swapping the CG for a sead a-f.

PAM 055 was released in 2000 and was in production for two years only (C series and D series).
You will have to drill the case and swap crown and tube to the period correct round tube and double o-ring crown afaik
