1162xx hands / dial on 1262xx Datejust 36 ?

Does the 3135 Datejust 36 hands / dial fit on the newer 3235 1262xx Datejust 36?

I assume the hands don't, that's normally the case for 3135 vs 3235 movement, but does the dial ?

Nope, 3135 dials are different, they have feets. 3235 dials don’t.

Using the proper parts it’s recommended, not only for model/year accuracy purposes.

Gen-spec 3135 hands fit gen-spec 3235 movement.

As for dial, no. Gen-spec 3135 and gen-spec 3235 dials are not interchangeable.
