Funny, I was introduced to this on Celebrity Cruises during a Caribbean run. I do agree , it's a tad sugary.

1.5 oz Kraken
1.5 oz pineapple (fresh or canned)
0.75 Campari
0.5 fresh lime
0.5 Demerara syrup (I make mine 2:1 and use 2/3rd of 0.5 oz)

Shake & serve. You can also drop half the spent lime into the shaker to get more flavor from the oils.

I met a guy from Guyana who lives over here. The story he was told in Guyana was that it was the Irish sent for indentured servitude to the Caribbean who invented Rum. They saw the sugar cane fermenting in the sun and went "Oh we know what we can make with that and how to do it". I have not seen anything online to authenticate that story.

Its very good stuff, and reasonably priced too. Certainly my favorite reasonably priced rum.

On our way home from yours, we picked up a bottle of this on the ferry. This is now my new favourite. It is exceptional
