You will need:
Gen-spec 1601/1603 DateJust case/bezel/crystal
Gen-spec dial
Dial dots and a way to snip the dial feet
Yuki's adapter allowing you to mount an ETA movement in a case designed for a 15xx movement
Date wheel overlay to convert ETA date wheel to 15x5 date wheel
ETA movement
Yuki has 1601/1603 dials with a large Mickey.
Ruby has 1601/1603 dials with a small Mickey or a small Mickey & Minnie.
Yuki also has Oyster Perpetual Date 150x dials and Air King 5500/1002 dials (both 34mm). OP Dates are small Mickey; AKs are large. A build with an OP Date or AK case might work as well. AK is a no-date watch so you wouldn't need a DWO.

I’ve got a Gen-spec 5500/1002 AirKing case/bezel/crystal and a Gen-spec 1500 Date case/bezel/crystal.
Yuki has dials for my cases, but they are for 15xx movement.

Yes, Yuki has an adapter that lets you put an ETA movement in a case that's made for a 15xx movement. I'd do a little research to see if one case/movement combination is better than the others, and pick your dial based on that. I'm not a watchmaker or modder but I do have a gen 5500 case with a 2824 so I know that combination works.
My problem isn’t put an ETA movement in an original case... my problem is put an original dial for 15xx movement on ETA movement...

You'll have to remove the dial feet, attach the dial to the movement using dial dots or some other method, and obtain a set of ETA hands. That's a fairly standard mod - anytime you see a Franken in the sales section with gen dial and ETA movement, that's what has been done.
