Looking for 111/510 - which version/factory ?

I went through the impressive work done by the Panerai rep connaisseurs on the forum here.
I would like to purchase either a PAM 111 (because of the simple dial yet with seconds) or a PAM 510 (same but with a movement with more power reserves).

I have a few questions for those in the know:
(1) compared to what's written in the guide, how do the different factories compare these days ? Which versions are now the best on the market, is that known ?
(2) regarding the movement, I care less about it looking like the original than how it works. Which rep has the best movement ? Especially in the case of the 510, I would love to have a rep with a long power reserves

510 doesn't have more power reserve. It's the same movement, since there is no clone of the 8 days gen movement.

ZF have the dubbel barrel movement on their PAM510

Like @Immo said, they're both 6497 based so they'll have exactly the same power reserve, +/- differences between two examples of the same movements. edit: Except I guess the ZF version, which is a modified P.3000 clone(?) Should have the best PR of the group.

One has super rep variants readily available, the other has a high grade rep available. Generally the rep market doesn't evolve fast enough for the guide to become outdated, that's why it's still the most recommended source of info. Go with the the ZF 510 or Noob 111 and be a happy man.

As an aside, if you're after power reserve over everything else, find someone to build you a vintage piece with an Angelus 8 day movement (or one of the multitude of cheaper 8 day movements available).
