I just got a ZF v2 hulk dial in for a project. Before I sent it off, I wanted to compare the ZF v2, ZF v1 and a CF (no clue as to which version) since I had all on hand.
TLDR: I prefer the ZF v2 to the v1 in all ways.
Overview:
I will mainly compare/discuss the ZF v2 and v1 here and only included the CF for a few pictures since it was one of my favorite alternative dials. The ZF v2 does catch more light that the v1 but you would only be able to tell if you had them right next to one another. The ZF v1 has maybe a degree more of extra 'saturation' and it is also a degree or two 'darker' than the ZF v2. I think lots of people prefered the ZF v1 dial because it doesn't react to light, when most rep hulk dials turn into a disco ball with sunlight. However, I often found my ZF v1 dial to be not catch light when it should, and overall not be tempermental enough with the light. The ZF v2 does a terrific job of catching a noticeable amount of extra light but has very smooth transitions from light to dark on the dial.
Face on:

You can see here that the ZF v1 in the middle can be easily preferred to the CF on the right because there are no harsh transitions of sunburst and overall - it's a darker dial. However, when you compare the v2 on the left to the v1 in the middle, I much, much prefer the v2 to the v1. I love the way the dial transitions and the shape of the sunburst.
I believe the ability for the sunburst to transition out from from at the handstack (follow red arrow below) towards the edge of the dial - curve - and then become lighter again while curving back to the edge (Blue arrow) is one of my favorite sunburst patterns on the hulk. Also below is a picture of a genuine hulk with the described sunburst pattern (historically, a very difficult to create light reflection with a replica dial).

Face on in bright sunlight:

I never really liked how the v1 (right column) caught bright sunlight because there was a - what looked like - a lime green sharpie mark across my dial. It was a sharp line and was 'meh' to me. At least the v2 has a thicker sickle. It's not exactly gen-like, but it's better IMO.

Here is another picture of the v2 showing up better than the v1. No doubt the v2 catches more light, but it's doing so in all the right ways.
Multiple bright lights overhead:
(v2 on top, v1 on bottom)
I always hate checking my watch in the elevator or a department store with a ton of lighting above because it turns into a disco ball. The v2 on the top here actually has more muted sickles - and in this case catches less light than the v1
Low light:
(v2 left, v1 right)
Nothing much to see here, but again - the v2 has a tendency to catch light a tad more than the v1. And, the v1 has that deeper hue of green as stated above.
