So I just purchased a Davidsen-DSN PAM 111H with Swiss Unitas 6497. How many times can you wind the crown without breaking something inside the watch?

You will feel it slowly get more resistance. When it reaches fully wound it will stop and not go any farther. You can't break it unless you rally try hard to wind it after it stops.

If it is completely unwound 50 turns will wind it. It will stop (can't turn it anymore) when it's fully wound. It won't break if you fully wind it...don't worry.

Turn it until it gets tight then stop. To wind it to much you will have to really want it. You will know by the feel.

If you turn the crown (CW) about 30 turns, then start to turn the crown slowly. You will get to a point where you can tell you've hit significant resistance. Stop. Your 6497 is now fully wound, and you are less likely to overwind by doing the last bunch of turns slowly.

Of course, this assumes you are starting with a fully unwound state.
