then saw that it's not actually ceramic at all....

I'm pretty sure that is indeed the case. Also given the fact that GF is not in the market anymore they have no direct competitor so they can do whatever they do want

I see that the GF is "replicated brushed ceramic case and caseback" and cost 488 USD and the ZF is "DLC plated solid stainless steel case" what"s better?

And more generaly what pro and cons bethween thes models?

The GF. The genuine uses ceramic, so the GF would be the most accurate.
