Quick question - Besides 029, are there any other PAMs with a centrally mounted (stacked with minutes and hours hands) running seconds hand (not chrono)?

Well, it may have been produced a long time ago but it was produced by Davidsen. Maybe send him an email and ask, he may not have a sample now but it may be possible he can still assemble one.
You would need to source a custom dial, but I've thought about making a version like what you're talking about.
I was going to take something like a 7750 powered Sub, have a dial made without no sec@9, then assemble part of the Chrono bridge and use the Chrono wheel as the second hand. An obvious fantasy build, but fun to have around.

If you're OK with the power reserve & date functions on the dial as well, the 027, 028 & 057 have central running seconds as well.
