I am glad that you are asking alot of questions here. Hopefully we can get you through some of these before you give a dealer an earful. ;-)
Both statements are correct. The IWC saphire has a light, bluish AR, on both sides. Both are describing the same watch.
You will need to send your payment in full, then the dealer will buy your watch, take pictures (and video in Lay's case), and you have 24 hours to decide. Look it over carefully. If you approve, contact them, say thanks for your hard work, and please send it. It is YOUR responsibility to contact them within 24 hours! If you find something that you cannot live with, and please be realistic, let them know and they should find a better one. A good example of this is a watch that I ordered was supposed to have a white date wheel with black numbers. This one had black with white numbers. The factory did not have a white with black, as per the gen, and they were not going to correct this mistake. I chose another watch instead. But if you are looking for a perfectly aligned '0' on a Spitfire, forget it, they are all crooked! This would not be a valid reason to reject a watch. Look closely at the pictures on their website. If you can live with one like this place the order. The one in the QC pictures should be very close. If you have questions, post the QC pictures and know that some people will never be pleased. We will tell you if something is really wrong ... but look at it yourself first.
After you approve, the dealer may send you an EMS # in a day or 2. Relax and wait for your watch to arrive. It will take longer than you want! Relax and wait for it to arrive.
Know that you are going to another country to buy this, and you need to abide by their customs. Being a high-maintenance 'Westerner' does not play well in China. You are a guest in the dealer's country, be thankful he is willing to do this for you! Treat him as if you would a waiter that is going back in the kitchen to get your meal. If you are high maintenance, a dealer might not be willing to work hard to resolve a problem, if one were to happen. A good relationship with a dealer is a great thing to have.
