Is this a fantasy model as I thought the 2000v only came with a grey dial? Also, other than the dial colour are there any changes from the previous 2000v release from XF?

I don't think there is much to update other than maybe a slightly more profiled cross and the addition of a screw down crown.

I've been considering the XF ultra-thin as my first rep purchase. Does it not have a screwdown crown? Pretty sure the gen does. This would seem to be a big miss

The XF one does not have a screwdown crown.

It's not too much more expensive than any other rep, I wonder why the factory is only doing a limited run of them? Unless that is a complete marketing gimmick and it is a full production item just like any other based off of sales

Likely because it’s a fantasy watch. The blue dial version doesn’t exist as a gen for this model (not yet, at least).
