I haven't seen any gens that are PVD coated, do they even exist?

They are not made at the Rolex factory with the PVD coating. The companies that do that are not affiliated with Rolex whatsoever.

Yes and they are very expensive. I'm not a huge fan of the pvd look.

Purely a cosmetic thing. A good DLC coating can be quite durable and scratch resistant, but the reason why most people get these aftermarket modifications (and their rep counterparts) I guess is because they're bored of the regular versions.

I had a PVD rep once, it was alright since I wanted a black watch, but with FC and full ceramic reps available nowadays, I'd probably buy that instead

I recall my rep bracelet for the Planet Ocean was 1 mm off. BUT I THOUGHT IT WAS 1/1!! PERFECT! Haha, learn the hard way sometimes.
