How tightly should the crown be screwed down?

I am worried that if I tighten the crown too much that it will deform any rubber seals and cause them to fail.

A related question: Should the crown be unscrewed when not being worn?

Just hand tight... nothing crazy. And you're right over tightening will damage the watch seals and lead to water ingress eventually.
Don't worry about it too much, just screw it down until it gets stiff and all the way in, just don't really try and make sure it's all the way down if that makes sense?
